Quick Bites: Monkey Bread (and Giveaway)

Yum! Have you had Monkey Bread? Maybe you're like me, living in a cave, and either haven't discovered it or just recently discovered it. I had it just once on a (tipsy) NYE eons ago... I remember savoring it but not much more. It wasn't until I got my Junior League of the Palm Beaches "Worth Tasting" cookbook ($29.95) that the light bulb went on.

And, it a 200 watt bulb! I made this for Mother's Day a few years ago and you couldn't get people's hands out to pass it around. Now, it's a holiday staple.
 
Yes, it's a little messy. But that's half the fun. Sugar, butter, biscuit dough, cinnamon, what more is there in life? So freaking good! To celebrate this tastiness, I'm not only giving you my recipe, I'm giving away one of the cookbooks that started it all. Get veeerrrrryyyy excited! Whether you're savvy around the kitchen, or don't know where your measuring spoons are, there's a recipe for you in here. I'm obsessed. I continually reach for this during the holidays and all year-around and so should you! Each recipe went through crazy rounds of testing before making it in here so trust me when I say you want this useful, gorgeous book. Recipe included below for Monkey Bread, but first...

And, now... the Monkey Bread recipe:

3 cans (10 count) refrigerator biscuits
1 cup granulated sugar
4 tsp ground cinnamon
3/4 cup (1 1/2 sticks) butter
1/2 packed light brown sugar

Preheart oven to 350 degrees.
Cut the biscuits into quarters. Mix the granulated sugar and cinnamon in a large sealable plastic bag. Add the biscuit quarters to the sugar mixture and seal tightly. Shake until coated. Arrange the coated biscuit quarters in a bundt pan sprayed with nonstick cooking spray.

Heat the butter and brown sugar in a saucepan until the brown sugar dissolves, stirring occasionally. Or, micro in a micro-safe bowl (this is what I do!). Pour the brown sugar mixture over biscuits and bake for 30 minutes. Invert onto a serving platter. DIG IN!

    I like eggnog custard pie. I found the recipe off of the Food Tv website a few years ago. I love custard and eggnog so a great combination of the two.

    its not the holiday season without gingerbread cookies. and i mean the real deal--little men with icing costumes!! yuuum! i eat the heads off first, ha!

    Christmas Bark! 16 oz vanilla flavored candy coating chopped; 2 cups small pretzel twists; 1/2 cup red and green m&m's; 1/2 cup chopped peppermint sticks. 1. Line cookie sheet with waxed paper. In medium saucepan, melt candy coating over low heat stirring occasionally. 2. Add remaining ingredients; toss to coat. Spread mixture thinly on wax paper lined cookie sheet. Cool 30 mins or until set. Break into pieces. I think I'm going to try white chocolate this year instead of the vanilla candy!

    Snooty popcorn is a staple for my kids at Christmas. You need 4 melted almond bark (white) squares and 1 regular size bag microwave popcorn. Pop popcorn and let cool, pour in large bowl or 2 gal ziploc bag. Melt almond bark and pour over popcorn. Mix til coated and pour out on wax paper til hardened. Break into chunks and enjoy. You can also add pretzels, m&ms or peanuts to this if you want variety.

    Personally, I am an equal opportunity Christmas cookie consumer. But, my husband's favorite is the Peanut Butter Blossom (peanut butter cookies with a Hershey kiss in the middle).

    My favorite holiday recipe is Eggnog French Toast Casserole. My mom has made it every yr since I was a kid. I'm happy to share the recipe if anyone is interested :)

    During the holidays, we always have to celebrate with my family's sweet potato pie recipe. My great grandmother started this tradition back in the 1920s. When she passed, my grandmother started making it yearly during the 1960s. When she passed away, my mom started making it until her age starting to prevent her from being able to cook. I just so happened to marry a guy who's favorite type of pie is Sweet Potato, so now I'm the one in charge of making it every year (my sister passed up that chance) :) I only have two sons so hopefully one of them (or their future wives) continue the tradition! The recipe (very simple) is:

    Ingredients
    4 cups sweet potato
    1 1/2 cup sugar
    3 eggs
    1/2 stick margarine
    1/2 teas. vanilla extract
    1/2 teas. lemon extract
    1/3 teas. cloves
    1/4 teas. allspice
    1/3 cup milk
    2 (9 in) unbaked pie crusts

    Directions
    Preheat the oven to 350 degrees.
    Wash your potatoes and boil them until soft. Let them cool and peel off the skin.
    In a mixing bowl, combine potatoes, sugar, eggs, margarine, vanilla, lemon, cloves, allspice and milk. Mix well.
    Pour mixture into pie crusts - distribute evenly.
    Bake at 350 degrees for an hour. Some ovens seem to bake it a little quicker so start checking after 35-40 minutes to make sure you don't burn it.
